Occurrence of methicillin-resistant Staphylococcus aureus (MRSA) in “coalho” cheese produced in Brazil

Os experimentos relatados neste trabalho tiveram como objetivo analisar a presença de Staphylococcus aureus resistente à meticilina (MRSA) em 112 amostras de queijo de coalho provenientes de 56 propriedades leiteiras de 28 cidades em todas as mesorregiões do Estado do Ceará, Brasil. O Staphylococcus aureus é um microrganismo presente na microbiota de humanos e vários animais de sangue quente. Devido à prática de atividades agrícolas, esses microrganismos geralmente são transferidos para os alimentos, como leite e laticínios, podendo levar a graves doenças. Durante décadas, diversos estudos demonstraram a capacidade desses microrganismos em adquirir resistência a antimicrobianos, incluindo a meticilina, tornando-se assim um grande problema de saúde pública. Esta análise levará em consideração a presença de genes codificadores de enterotoxinas e toxina da síndrome do choque tóxico, bem como a presença do gene blaZ para β-lactamases e resistência à oxacilina. A pesquisa encontrou 69 isolados de S. aureus, dos quais 13,04% tinham o gene mecA que codifica a proteína de ligação à penicilina, conferindo resistência à meticilina, em amostras de queijo de 6 cidades diferentes; tendo a capital do estado, Fortaleza, a maior prevalência (23,19%) de isolados mecA positivos. Verificou-se também que 55,07% dos isolados de S. aureus possuíam o gene blaZ, 7,25% demonstraram resistência à oxacilina nos testes de difusão em disco em placa e este estudo não mostrou a presença de isolados portadores de genes toxigênicos. Os achados sugerem que a supervisão rigorosa dos processos de produção na indústria de laticínios é necessária em todos os processos de escala de produção, evitando assim contaminações e possíveis problemas para os consumidores.
