X-ray diffraction has limited applicability in investigation of milk tampering

Resumo
O objetivo deste trabalho foi usar a difração de raios-X na identificação e na detecção de adulterantes no leite. Duas substâncias desconhecidas foram enviadas anonimamente com a alegação de que eram usadas por motoristas dos caminhões de coleta para disfarçar a adição de água no leite cru. As amostras foram analisadas por difração de raios X e submetidas à análises físico-químicas. A difração de raios X identificou a primeira substância como citrato de sódio, em concordância com sua capacidade de diminuir o ponto de congelamento. A segunda substância foi identificada por difração de raios X como sacarose, em conformidade com sua capacidade de aumentar a densidade, diminuir o ponto de congelamento e, por fim, também ser detectada no teste qualitativo de resorcina. Para avaliar se a difração de raios-X poderia ser útil na detecção de adulterantes já incorporados no leite, algumas amostras foram adicionadas com diferentes porcentagens de ureia, hidróxido de sódio, citrato de sódio e sacarose. As amostras foram liofilizadas e analisadas por difração de raios-X, a qual não foi capaz de detectar nenhum adulterante em nenhuma concentração. Este é o primeiro relato de tentativa de diagnóstico de substâncias estranhas no leite por difração de raios-X. Essa técnica apenas pode ser útil quando aplicada para identificar adulterantes antes da sua incorporação no leite, uma vez que sua natureza amorfa parece ser uma limitação para a técnica.
