Metataxonomics contributes to unravel the microbiota of a Brazilian dairy

Resumo
Para esta nota de pesquisa, foram obtidas 90 amostras provenientes de um laticínio brasileiro, foram combinadas em quatro grupos (matéria-prima, produto acabado, superfícies com contato e superfícies sem contato com alimento), e foram analisadas por metataxonômica baseada no sequenciamento do gene 16S rRNA. Os resultados mostraram altos índices de diversidade alfa para produto final e superfícies sem contato com alimento, mas no geral, índices de diversidade beta foram baixos. As amostras foram separadas em dois “clusters” principais, e a microbiota central (“core microbiota”) foi composta por Macrococcus, Alkaliphilus, Vagococcus, Lactobacillus, Marinilactibacillus, Streptococcus, Lysinibacillus, Staphylococcus, Clostridium, Halomonas, Lactococcus, Enterococcus, Bacillus e Psychrobacter. Esses resultados destacam a ocorrência de táxons raros em laticínios, e isso pode colaborar no desenvolvimento de estratégias para proteção dos alimentos.
