Microbiological and physicochemical characteristics of buffalo milk used for dairy products in southern Brazil

Resumo
No Brasil, o mercado de leite de búfala vem crescendo. No entanto, não foram estabelecidos padrões de identidade e qualidade para esta matéria-prima, nem foram definidas distinções adequadas entre o leite de búfala e o leite bovino. Atualmente, o Estado do Rio Grande do Sul (RS) possui apenas três produtores que fornecem matéria-prima para os derivados comercializados oficialmente. O objetivo deste estudo foi determinar os padrões de identidade e qualidade do leite cru de búfala nesta região. As amostras foram obtidas quinzenalmente em três tanques de resfriamento das propriedades entre junho de 2017 e agosto de 2018, totalizando 69 amostras. As médias dos resultados dos parâmetros físico-químicos gordura, proteína, lactose, sólidos totais, sólidos desengordurados, cálcio, densidade, índice crioscópico, acidez e CCS foram 5,5g / 100g, 4,06g / 100g, 5,07g / 100g, 15,5g / 100g, 9,96g / 100g, 0,161g / 100g, 1,034 g / mL, -0,527°C, 16°D e 95x10³ células / mL, respectivamente. Em relação aos parâmetros microbiológicos, a média da Contagem Padrão em Placas e dos coliformes termotolerantes foram 9,0x104 UFC / mL e 1,6x10² NMP / mL, respectivamente. Ainda, 36 amostras foram positivas (52% do total) quanto à presença de estafilococos coagulase positiva. Nenhuma amostra apresentou resultado positivo para Salmonella spp. e Listeria monocytogenes. Também não foram detectados resíduos de antibióticos ou antiparasitários em nenhuma amostra. Por fim, o leite de búfala utilizado como matéria-prima para laticínios no sul do Brasil apresenta características físico-químicas e microbiológicas satisfatórias, de acordo com a literatura científica recente.
