Rheological and microstructural characterisation of heat-induced whey protein isolate gels affected by the addition of caseinomacropeptide

Resumo
O caseinomacropeptídeo (CMP) é derivado da clivagem, feito pela quimosina, da κ-caseína durante a produção de queijo. Este estudo desenvolveu géis a partir de CMPs, que foram isolados por diferentes sistemas de ultrafiltração, com isolado de proteína de soro de leite (WPI) e, suas características reológicas e ultraestruturais. O gel de 30% de WPI mostrou valores de módulo de elasticidade elevados (G ') e estrutura mais forte do que as outras amostras com CMP. Outro gel, com 50% de proteína, 30% de WPI e 20% de amostra CMP1 isolada do retido de 30 kDa, tinha uma estrutura mais fraca e menor valor G '. O terceiro gel, com amostra de 30% de WPI e 20% de CMP2 do retentado de 5 kDa derivado do retido de 30 kDa, apresentou resistência estrutural intermediária. Apesar do aumento na concentração de proteína com a adição de CMP, houve uma diminuição na força da rede de gel. Diferentes processos de isolamento de CMP também contribuíram para diferenças na análise microscópica de estruturas de gel com o mesmo conteúdo de proteína.
